Oatmeal Chocolate Chip Cookies made with Lily's Milk Chocolate Baking Chips Sweetened with Stevia, to give a healthier spin to this classic recipe. 

 

Vegan Oatmeal Chocolate Chip Cookies

 

Wet:

  • 3/4 cup unsalted almond butter

  • ⅔ cup light brown sugar

  • ¼ cup pure maple syrup

  • 1/3 cup melted coconut oil or avocado oil

  • 1/3 cup apple sauce

  • 1 tsp vanilla extract

 

Dry:

  • 1 2/3 cup + 2 tbsp quick oats

  • 1 cup + 2 tbsp oat flour (pour and level to measure)

  • 1 tsp baking soda

  • 2 tsp baking powder

  • 1 tsp ceylon cinnamon

  • ¼ tsp salt

  • ½ cup Lily's baking chips 

  1. Preheat the oven to 350 degrees Fahrenheit. 

  2. In a large mixing bowl, combine all wet ingredients. Whisk together until well mixed.

  3. Add in all dry ingredients except for chocolate chips. Stir together. 

  4. Fold in the chocolate chips until well mixed. 

  5. Use a small cookie scoop or spoon and roll into 1 inch balls. 

  6. Place on a baking sheet lined with parchment paper. Gently press on some extra chocolate chips if desired. 

  7. Bake for 12-15 minutes. 

  8. Enjoy!
